Don’t know about you, but my boys get far to much chocolate at Easter. So im always looking for new fun ideas to make something yummy out of them.
I found this recipe for Mud Pies, that were so easy to make and utterly yummy I had to share it with you all.
Ingredients
200g chocolate (broken into pieces)
200g butter
3 Eggs
75g Caster Sugar
100g self raising flour (sifted)
2 tablespoon of icing sugar or cocoa powder to decorate after
Instructions
1. Stand 12 silicone cases on a baking tray or line a 12 section cupcake tin with paper/foil cases.
2. Put the chocolate and butter in a heatproof bowl and set over a pan of simmering water. Leave until melted then stir together.
3. Put the eggs and sugar in a bowl and beat together with a hand whisk for 5 mins, until light and foamy. Add the flour and the melted chocolate mixture and fold in gently with a large metal spoon. Divide the mix equally between cases.
4. Bake in a pre-heated oven, 160′C, Gas mark3, for 15 minutes or until risen and just firm to touch. Leave to cool for 5-10 mins. Sift the cocoa powder or icing sugar over the top to decorate.
