Fajita Fajita!

One of Kyle’s all time favourite meals has to be chicken fajitas. Mainly because he likes to “build” it himself.

Its so easy and simple to make,


2 x medium chicken breasts
1 x red pepper
1 x yellow pepper
5/6 mushrooms
1 small onion
1 small chilli
1 tablespoon cumin
2/3 tablespoon smoked paprika
Olive oil

For the table

Tortilla wraps
Grated carrot


Cut the chicken into strips and slice the peppers, mushrooms, onions & chilli. Put into a bowl and drizzle with olive oil.

Sprinkle over the cumin and paprika. Mix together so the chicken & vegetables are well covered.

Cook in a griddle pan or wok for 5-10 mins on medium heat (until the chicken is cooked through)

Serve in the wok (pan) on the table so everyone can dig in and make their own.

For the children I make the same just without the chilli, cumin and paprika.
